Are you sure you are editing the correct layout? Stuff like an email address can either be: 1) pulled from a data field like General Settings, OR 2) inserted as a static text field. It is the kind of thing that I can quickly help with if we get a remote desktop session going, but can be hard to give you advise about "blind" since the layout interface is so graphic in nature.
